At Vitalia Westlake, we prioritize from-scratch cooking and source fresh ingredients weekly. Our culinary team prepares meals that are flavorful, nutritious, and tailored to resident needs. In my kitchen, from-scratch cooking is where passion meets purpose. I build flavors carefully and intentionally. With every step, I add more than taste. I add care, experience, and respect for the craft.

Fresh ingredients directly support resident health. By limiting processed items, we preserve natural flavor and nutritional value. We remove unnecessary middle steps and keep ingredients closer to their source. As a result, residents receive cleaner, more wholesome meals.

Adapting with Intention

I adapt fresh, from-scratch meals to meet senior-specific needs and preferences. I let recipes develop naturally while honoring dietary and allergy considerations. At the same time, I rely on fresh herbs and careful technique to maintain bold flavor. This approach protects both nutrition and enjoyment.

We balance comfort foods with lighter, health-conscious options. For example, when we serve rich items like gravy, we pair them with fresh vegetables and complementary sides. That balance enhances both presentation and nutrition. Residents enjoy familiar favorites without sacrificing wellness.

One standout resident favorite was our house-made bread bowls. Although the soup inside was also prepared from scratch and well received, the bread bowls truly stole the spotlight.

House-Made Bread Bowl Recipe

7½ cups King Arthur All-Purpose Flour
3 cups warm water to activate yeast
1 tablespoon salt
1½ tablespoons active yeast

For our event, we scaled this recipe to twenty times the base yield to meet demand.
